Experiences with Roadlink? MTB cassette for MNT

Does anyone have experience with the Roadlink extension:
I plan to ride around Norway a bit and on longer 10+% climbs I would like to do some pedaling as well as some spinning.
The bike is a CX/Gravel with a 105 groupset: 50/34 front and 11 speed 11-32 cassette in the rear +RD-5800-GS.
Supposedly, the 11-40 cassette should go down with this Roadlink. The new cassette would be an 11 speed CS-M7000 or CS-M8000. Can anyone tell me why this is not a good idea? Also, can anyone recommend a workshop that knows how to screw this onto a Roadlink?
